And it is not simple. We have been there!

Your family may be flying into Los Angeles from across the country. Someone is bringing their famous pie. Someone has a new dietary restriction you found out about three days ago. You are trying to figure out whether the turkey will actually be ready on time while also wondering whether you have enough wine glasses.

And then there are all the little things nobody thinks about until Thanksgiving Day:

When we staff a Thanksgiving dinner at a private home, we do not think of the job as starting when dinner is served. By then, a lot has already happened.

The dining table needs to be ready, wine needs to be chilled, glassware has to be out, the bar needs to be organized, serving dishes need to be located. If catering is arriving, somebody needs to receive it and figure out what goes where.

And every private home is different.

Unlike a restaurant, there is no service station conveniently stocked with everything the staff need.

The extra wine glasses may be in one cabinet, but serving platters are going to be somewhere else. Ice is in the garage freezer, but the trash bags are not under a sink but in a drawer nobody would think to check.

This is why you always need Thanksgiving servers arrive before the guests.

Give them time to learn the house and understand the plan. It is much easier to answer, “Where are your dessert plates?” at 2:30 pm than when twenty relatives are walking through the front door at 3:00 pm.

YOUR THANKSGIVING CATERER MAY BE BRINGING DINNER — BUT WHO IS SERVING IT?

This is especially important for Thanksgiving parties hosted at home.

A client tells us: “The food is already taken care of. We hired a caterer.” Great! Then we ask a follow up question "What the caterer is actually doing?" And this is where we start unfolding the actual Thanksgiving dinner layout.

Sometimes it is full-service catering with its own service team. Sometimes they are only delivering Thanksgiving dinner to the front door and leaving.

These are two completely different senarious.

If you have drop-off catering, someone still needs to receive the food, organize the boxes in the kitchen, transfer dishes to plates, prepare the buffet or serving area, keep everything presentable during dinner, clear it afterward, and deal with whatever is left in the kitchen.

And this is one of the situations where hiring residential waitstaff makes the most sense.

You already paid someone to cook your Thanksgiving dinner so you do not necessarily need another catering company - you only need people to handle everything around the food.

ONE GOOD SERVER CAN TAKE A SURPRISING AMOUNT OFF YOUR PLATE

Not every Thanksgiving dinner in Los Angeles needs a giant team.

You would rather book the right number of wait staff than put five servers inside a home where, first of all, there is not so much space, and secondly, two experienced servers could comfortably handle the work load.

For a smaller gathering, one server might help finish the table, greet guests with drinks, assist with dinner, clear plates, bring out dessert, and start cleaning the kitchen. With a larger guest count, two or more servers can divide the work.

One person may stay closer to the guests while another handles the dining room and kitchen. If you have a buffet, someone can keep an eye on it instead of waiting until your aunt announces that the mashed potatoes are gone.

And if the dinner is more formal, the workload changes again. Plated service, family-style dinner, and buffet service all require different levels of attention.

This is why we do not give a Thanksgiving staffing number based only on guest count. Tell us how you are serving dinner and what you want the staff to take care of, and the number becomes much easier to determine.

AND THEN THERE IS THE BAR!

Thanksgiving has a funny way of starting with: “We’ll just have some wine.”

And then somebody wants an Old Fashioned, someone brought Champagne, your cousin wants to know whether there is tequila served... And suddenly the kitchen isle has become a bar.

For smaller Thanksgiving dinners, a dedicated bartender may be unnecessary. Servers can usually help with wine, beer, water, and simple beverage service.

But once you have a larger guest list of 20 people or want actual cocktails, hiring a bartender in Los Angeles can take an entire part of the event away from the host.

The bartender can prepare the bar before guests arrive, chill the alcohol beforre guests arrive, organize ice and glassware, open wine, make and serve cocktails, keep the area clean, and manage drinks throughout the evening.

There is also something nice about guests knowing exactly where to go when they want another drink instead of asking the person who is currently trying to carve a turkey.

THE MOST UNDERRATED THANKSGIVING JOB IS NOT SERVING - IT IS CLEANING

Dinner gets all the attention, but the kitchen afterward deserves its own warning.

Thanksgiving produces an unbelievable amount of dirty stuff: dinner plates, dessert plates, wine glasses, cocktail glasses, serving dishes, pots, pans, containers, bottles, leftovers, trash... Did we forget anything?

And it happens fast!

This is why, for some residential events, you would rather add a kitchen assistant or busser than another guest-facing server. While the servers are taking care of your guests, somebody needs to keep the back of the house from becoming a disaster after the dinner is over.

A kitchen assistant helps remove dirty plates, collect glassware, manage the trash, and keep counters clean. Serving dishes can start disappearing as dinner ends instead of all arriving in the kitchen at once.

And cleanup can begin while you are still having Thanksgiving, not after everyone leaves.

THANKSGIVING DINNER HAS ITS OWN RHYTHM

There are important moments of gathering with the family when people arrive when you want drinks and appetizers to come out. And then everyone eventually moves toward the table and the dinner happens.

Then there is that moment when nobody can possibly eat another bite, but twenty minutes later, somehow everyone wants the famous pie.

So the wait staff needs to follow that rhythm rather than constantly interrupting it.

If your family is still talking over dinner, there is no reason to aggressively clear the table because the timeline says dinner should be finished. At the same time, when everyone moves into the living room to socialize, that is the opportunity to clear, reset, organize leftovers, make coffee, and prepare dessert.

Good residential service should follow the family, not make the family follow the service.

That distinction matters to us.

This is one part where we want to be very practical. Thanksgiving is difficult to staff last minute.

Not because Los Angeles suddenly runs out of servers, but because servers have families too. A lot of event staff travel for Thanksgiving, others block the holiday off months in advance to enjoy their day off. And some staff do choose to work Thanksgiving Day.

So every week you wait, the available pool becomes smaller. For regular events, we can often solve a last-minute staffing request, but thanksgiving is not the date we would choose to test that ability.

If you know you are hosting a family dinner and want experienced servers, bartenders, or kitchen support in your Los Angeles home, book the team early enough so that you actually have options.

THE POINT IS NOT TO TURN THANKSGIVING INTO A CATERED AND FORMAL EVENT

This is where a lot of people sometimes get the wrong idea about hiring event staff for a Thanksgiving dinner: you are not hiring servers because Thanksgiving needs to become formal, you are hiring help because you invited everyone to your home and presumably want to spend some time with them.

If cooking the turkey is your thing, cook the turkey.

If you love setting the table, set it yourself.

If your family has been passing the same serving dishes around the table for twenty years, keep doing exactly that.

But let somebody else refill the wine. Let somebody else collect the plates. And when everyone gets up for dessert, let somebody else walk into that kitchen so that you can enjoy your own hosting!

The best Thanksgiving service is not the one your family remembers because there were staff everywhere, it is the one that gave you enough help that nobody noticed how much work was happening behind the scenes.
